The Gliadin is a group of simple, vegetable proteins derived from the gluten of various grains. One of the prolamines, derived from the gluten of wheat, may be separated into 4 discrete electrophoretic fractions. It is the toxic factor associated with celiac disease. It can also serve as a useful delivery method for sensitive enzymes (such as superoxide dismutase, which is fused with gliadin to form glisodin). This helps protect them from stomach acids which cause breakdown.
