Increased yeast in the wines led to increased contents of acetoin [513-86-0] and some Et esters in the wine distillates. These esters were Et decanoate [110-38-3], Et octanoate [106-32-1], Et dodecanoate [106-33-2], Et hexanoate [123-66-0], Et myristate [124-06-1], and Et palmitate [628-97-7]. Other compds., including other Et esters, were not affected.
