2,3-DIMETHYLPYRAZINE (5910-89-4) is used as a composition of flavouring, mainly for confecting essence of meat, nuts, chocolate, coffee, cream and tobacco.

2,3-DIMETHYLPYRAZINE Production

By heating the reaction product of diacetyl and quadrol with potassium hydroxide in the ethanol to form 2,3-DIMETHYLPYRAZINE (5910-89-4). 2,3-DIMETHYLPYRAZINE (5910-89-4) is also formed during the cooking of some foods via Maillard reactions.
