can exert antioxidant protection even in cell systems, in order to
verify if the addition of these metabolites in the growth medium
can positively modulate the redox state of cells exposed to differ-
ent oxidative stress generating agents. Therefore their possible
use as natural antioxidant additives in various food products will
be also considered in place of synthetic antioxidants.
