Herbal medicine was proven to be very effective in the management of diabetes. This effect was mainly attributed to the polyphenols, a class of secondary-metabolite phytochemical found in the matrix of different fruits and vegetables. This chapter was elaborated to investigate the hypoglycemic effects of red sour cherry extracts (pulps and seeds) in chemically induced diabetic mice. Sour cherry pulp and seed extracts were shown to be promising in the treatment of diabetes. This finding could be mainly attributed to the antioxidant activity of red sour cherry extracts. The pulp extracts exhibited a more pronounced hypoglycemic effect compared to the seed extracts. Further research is required to test the antidiabetic effects of red sour cherry extracts in in vivo human studies.
