Herein, we reported three polyzwitterions: binary one (PAAS) synthesized with acrylamide (AM) and 2-((3-methacrylamidopropyl)dimethylammonio)ethyl sulfite (MAPES), and two ternary (PABA, PADA) with AM, MAPES and benzene sulfonamides. The polyzwitterions were successful synthesized and proved by FT-IR and 1H NMR. TGA analysis provided scientific result about thermal stability, and SEM images revealed bead model microstructure of self-assemblies which was composed of polyzwitterions and sodium lauryl sulfonate (SLS) of 0.5–3.0 g/L. Synergy of hydrogen bonding, hydrophobic association and electrostatic effect from self-assembly systems contributed to higher apparent viscosity (η), lower interfacial tension (IFT), electro-conductibility (σ) and greater peak height from 1H NMR. Exploration for adsorption of SLS by molecular structure and interaction further explained low IFT and electro-conductibility of self-assembly system through D-value of Cps and C[γs] as well as Cs and C[x]. Rheological property test including anti-shear, temperature tolerance, resistance to salt and viscoelasticity revealed that polyzwitterion-SLS 1.0 g/L was remarkable comparing with same series of self-assemblies. Moreover, PABA-SLS-1.0 g/L system demonstrated distinct temperature-responsive performance at 100 °C, 170 s−1 and salt irritation behavior for Na+, Ca2+, Mg2+.
