12-Hydroxystearic acid (12-HSA) is obtained via hydrogenation of castor oil resulting in complete saturation of the hydrocarbon chain. The first study addressing the thickening action of 12-HSA occurred in 1972 when it was added to peanut butter. In this study, low levels (0.5%–1.0%) of 12-HSA were added to peanut butter in an attempt to prevent the syneresis of oil. Industrially, it is used to increase the recovery of oil from oil wells. More complex delivery systems are being developed where a colloidal dispersion of gelled oil nanoparticles have been made using 12-HSA as the gelling compound.
