The structure of the exocellular glycocalyx polysaccharide of Pseudomonas fragi ATCC 4973, a bacterium implicated in the spoilage of meat, has been determined using hydrolysis, methylation analysis and 1D- and 2D-n.m.r. spectroscopy.
