This chapter discusses the individual pyrolysis of a number of α-amino acids including alanine, arginine, asparagine, aspartic acid, cysteine, cysteine, glutamic acid, glutamine, glycine, histidine, hydroxylysine, hydroxyproline, isoleucine, leucine, lysine, methionine, phenylalanine, proline, serine, threonine, tryptophan, tyrosine, and valine. For each amino acid, specific pyrograms are given associated with the list of decomposition products. Specific attention is given to the formation of harmful compounds from amino acids, including compounds such as HCN and specific harmful heterocyclic amines. In addition, the pyrolysis of betaines, small peptides, and Amadori products is presented. Also, the pyrolysis of mixtures of amino acids and carbohydrates is discussed as these two type of compounds are frequently found together in food, and their pyrolysis in a mixture can have health implications.
