Vitamins A, D, E, and K are fat-soluble nutrients with many diverse functions. Having less than optimal supplies of them in the body is common and can cause significant harm to human health. Contrary to common assumptions, of the fat-soluble vitamins, only vitamins A and D accumulate with long-term excessive intake. Vitamin E does not accumulate as readily, but in contrast, excessive vitamin K has a half-life of only a few days, and supplies are easily depleted. Several other fat-soluble nutrients have a critically important function as enzyme cofactors, as well as contributing to cell structure, electron transfer, and antioxidant defense.
