    Publisher SummaryThis chapter describes various methods for preparing CERAMIDE GLYCANASE (cas 106769-66-8)s (cer-glycanase) from leech (Hirudo medicinalis) and earthworm (Lumbricus terrestris). These organisms are suitable for the structural analysis of ceramide glycans. Because cer-glycanase can release the intact ceramide and the glycan chain from various ceramide glycans, it should become a very useful tool for the structural analysis of ceramide glycans. In addition to acting on ceramide glycans, this enzyme can also hydrolyze sphingosine glycans (lysoglycosphingolipids) and alkylglycans. In addition to leeches and earthworms, other annelids (oligochaeta and polychaeta) were also found to contain this enzyme. The efforts to detect this enzyme in humans and higher animals have not been proved successful. The biological function of cer-glycans in annelids remains to be established.
