    Pyruvate (carboxylate anion of pyruvic acid) is an organic molecule, with a backbone of 3‑carbon atoms. Pyruvate is known to undergo several fates depending upon the organism under consideration. It is one of the only molecules involved in both synthesis and breakdown pathways, thereby making it a very busy molecule. Aberrant levels of this metabolite are known to cause several disorders like diabetes, cirrhosis, cardiovascular diseases and severe brain abnormalities. This is an attractive candidate for bodybuilders as a supplement, and also holds an important position in the food and beverage industry. Recent research also showed pyruvate as a screening molecule for cancer. Thereby, detection of this metabolite is an important aspect from the clinical and diagnostic point of view. Conventional methods available for the detection of pyruvate had several disadvantages such as tedious, time-consuming, non-specific, expensive instrumental setup, the requirement of trained personnel's, especially for chromatographic techniques. Biosensing techniques overcome these pitfalls, as these are easy, highly sensitive and fast. Pyruvate biosensors deciphered till date work optimally within 6–180 s, between pH ranging from 5.7 to 7.0 and temperature 30–35 °C and pyruvate concentration ranging from 4 to 16,000 μM. Numerous biosensors have been elucidated to detect pyruvate levels in biological fluids like serum of diseased patients, calf serum and in food products like yogurt, onion and garlic. This review illustrates the various analytical parameters for pyruvate determination with a special focus on pyruvate biosensors. Also, the future scope for improvement and enhancement of pyruvate biosensors are discussed.
