Two Collocation Taboos of Soy-bean Milk
  • Two Collocation Taboos of Soy-bean Milk
  • Nowadays, many people have already realized the high nutritional value of soy-bean milk. The collocation of soy-bean milk with some other foods is also concerned by many people. Recently, there are two kinds of collocation taboos which are concerned by many people. They are the group of soy-bean milk with egg, and the group of soy-bean milk with sugar. These two kinds of collocation will be explained as follows.

Many people have already acknowledged that eggs can not be eaten with soy-bean milk together. There are two reasons for such a kind of taboo. The first reason is that the inhibitory substance of contained in the latter can restrain the digestion of protein and decrease the nutritional value, and the second reason is that the sticky albumen contained in the former can be integrated with the trypsin contained in the latter to produce a kind of substance which is hard for the human body to digest. The first reason is relatively reasonable, as soy beans indeed contain a kind of inhibitory substance of trypsin which can restrain the digestive effect of trypsin and decrease the absorption of protein. Therefore, soy-bean milk must be cooked thoroughly to drink so as to destroy the activity of inhibitory substance of trypsin. However, the second reason is rather false. Trypsin is a kind of enzyme secreted by the pancreas of human or animals, and its role is to decompose protein. Soy beans do not contain such a kind of substance at all. Therefore, it is reasonable to eat eggs and drink soy-bean milk together if these two kinds of foods are both boiled completely.

It is also said that people should not add brown sugar into soy-bean milk. The organic acid contained in the former can be integrated with calcium or protein contained in the latter to produce the sediment, which can reduce the nutritional value. However, the truth is that there is no calcium contained in the latter at all. In addition, it is also difficult to say whether organic acid can be integrated with protein and the product can be digested by the human body. Even if organic acid can be integrated with protein and further decrease the nutritional value, the amount of organic acid contained in brown sugar is too little to realize such a “project”.

Many of the so-called collocation taboos have still not been verified by the science. Therefore, people should not believe them blindly.
