  • Modern people pay much attention to the health preservation by food. In their opinion, how to absorb as much as nutrition is very important. However, some dietary habits significantly influence the absorption of nutrition and the quality of diets. 

    First, store too much food. Many people buy much food in one time for they are busy or lazy. But in fact, if the food is stored for a longer time, it means more area of food is exposed to the air and light. As a result, more nutrients lose. For example, when green vegetables are stored for one more day, 10% of vitamins can be decreased. When spinaches are placed at room temperature, 50% of their folic acid loses. When fish is stored in freezing chamber for three months, 30% of its vitamin a and vitamin E lose.

    Second, eat more white rice and wheat flour. In fact, during the processing of white rice and wheat flour, many nutrients such as vitamins and minerals lose because vitamin B, dietary fibers and mineral salt generally exist in hulls of seeds and embryos. Thus people need to eat more coarse cereals.

    Third, prefer to eat meat. Meat is acidic food which increases the acidity of blood. In fact, when the blood turns to be acidic, sodium and calcium in the body would neutralize the excessive acid. As a result, the body may lack both of the two nutrients. And thus, people should eat some fresh fruit and vegetables with meat.

    Fourth, freeze the rest food. Have you ever done that? You cut some meat from a large piece and freeze the rest again. In this way, various nutrients such as proteins and vitamins can run off. Besides, the food may be infected by bacteria. The right way is to cut the fresh meat into pieces and pack them in bags. You take how much you need in a time.

    Fifth, cook dishes for a long time. Most people think dishes are more delicious if they are cooked for a longer time. As a matter of fact, various nutrients lose more when the temperature is higher. You’d better control the cooking in 20 minutes. Try not to stew or fry meat more than 2 hours.

    Sixth, copper pans and aluminium pots are also a good choice to cook dishes. In fact, tableware made of stainless steel, iron or glass is a good choice. When you cook dishes in an aluminium pot, more vitamin C runs off. And copper material is called “the enemy of vitamins”. However, when you cook acidic food such as tomatoes in iron pans, you can increase the absorption of the active iron a lot.
