DOCUMENT TYPE: Journal CA Section: 16 (Fermentation and Bioindustrial Chemistry) The wine material used for sherry prodn. was found to contain free caffeic acid [331-39-5], protocatechuic acid [99-50-3], and p-hydroxybenzoic acid [99-96-7]. At the end of aerobic fermn. with sherry yeast (Saccharomyces oviformis), 2 more acids were formed: gallic acid [149-91-7] and p-coumaric acid [7400-08-0]. The concns. of anthogyamins and leucoanthocyanins were markedly lowered. The total quantity of phenols was only slightly reduced.

DOCUMENT TYPE: Journal CA Section: 62 (Essential Oils and Cosmetics) Section cross-reference(s): 10 A wild Pseudomonas aeruginosa isolated from a surfactant contg. 0.3% methylparaben [99-76-3] and 0.2% propylparaben [94-13-3] was able to grow on cultures contg. the preservatives. The original contaminated product contained small amts. of 2 compds. with chromatog. retention times similar to those of Me [24262-66-6] and Pr 4-acetoxybenzoate [27739-13-5]. The wild organism was able to grow on 4-hydroxybenzoic acid [99-96-7] and the 4-acetoxybenzoates, but could not grow on ortho and meta hydroxybenzoates and derivs. In the surfactant samples, the organism reduced paraben concn. by ~30% in 28 days. All the compds. tested, except 4-acetoxybenzoic acid [2345-34-8] and its Me ester, were effective preservatives in the presence of the std. USP or ATCC culture of P. aeruginosa used in challenge testing.
